Sinks should be a non-pourus material with stainless being the preferred type. Ideally two separate sinks should be utilized either next to each other or in separate preparation areas. A double basin sink can work as well as a large single sink if you purchase racks for meat and dairy cleanup. A compromise to two sinks is a three-compartment sink with a non-kosher sink in between.

Make sure that Countertop materials are pure granite or stone. Sometimes they are really “composites” and therefore cannot be kashered. These non-porous surfaces can be used for both meat and dairy, provided that they are thoroughly cleaned and that boiling water is poured on them in between meat and dairy operations. Wood and stainless counters may also be kashered if they have a smooth surface and no cracks. Kosher law does not, however, allow kashering of plastic or materials with plastic components.
